Peanut Butter Balls!

I remember being in kindergarden and having a treat day where everyone's parents brought something for the class to eat. Someone brought these absolutely amazing peanut butter balls that I remember thinking was the best thing on the planet! Of course 5 year olds don't think to ask for recipes and I've been searching for them ever since :(

I tried a new recipe today that actually came pretty close! I used a container full of Nutter Butter cookies and crushed them all up in my blender. I really wish I had a food processor because it was kind of a pain in the you know what! Anyway, once they're crushed up, mix them together with room temperature cream cheese. You should probably use your hands to get it all incorporated. Then roll the mixture into little balls and coat with sugar. Place on a cookie sheet covered with wax paper and refrigerate. That's it!

I kind of think they look like chicken nuggets in these pictures-ha! And yes, two of my goals are to first get a decent camera and secondly-learn how to use it! These pictures lately are just not doing the pups or food or anything else any justice!

Progress Report...

I mentioned in one of my earlier posts that I've been meaning to let you all know how my whole giving up eating out for 40 days was going.'s actually been going really well! You might remember that my rule was to only buy food from a grocery store. I did say that if someone brought me food without me requesting it, then that would be okay. I'm happy to report that I haven't cheated once!

My work did have lunch catered by an Italian food place once and then people have randomly brought treats to work that I've allowed myself to participate in because they fall within my rules. The one thing I'm iffy about is a work lunch. We had someone new start at work and one of the other girls wanted to take him out to lunch to welcome him to the company. She asked me to go with her because she thought it would be more appropriate if we both went with him and said she was paying for the meal since it was a work thing. I really didn't want to go because of this whole 40 day thing, but in the end I decided it was okay-I didn't request to go and I didn't buy anything. So, we ended up going to Olive Garden where I only got soup and salad because I was still feeling the guilt-lol! I'm so weird sometimes, but I really, really don't like to fail at things.

I've decided that even though this all officially ends April 1st, I think I'm going to stick with it! If someone does ask me to go out to eat or if I just have a crazy busy day and want to pick up some dinner then I'll allow myself, but for the most part I want to continue to only eat what I buy at the grocery store. It's so much better for my budget and I'm truly enjoying all the new recipes I'm trying!

That means you can expect me to be posting even more recipes soon, but I guess that's all apart of finding my inner domestic diva!

I absolutely adore this...

Like I really, really want to buy five or six of them and scatter them about my house. They're $19.99 a piece though (which isn't all that expensive, but I want so many!) and I honestly have no idea where I'd even put them...My couch is tan and already has a bunch of pillows so they wouldn't match. My bedding is black and white, but it has a paisley pattern and it came with a bunch of pillows so these wouldn't really match.

Maybe one day I'll buy a cream colored wing back chair to put by the fireplace and throw one of these one it...they're just so pretty!

I absolutely love bringing treats to work. We're not one of those offices that seem to have treats brought in everyday so when we do, it's kind of fun. And it also helps me to cross another thing off my 101 list! I typically decide to bring desserts because they don't have to be refrigerated and are easy for someone to just pop in and grab.

I saw the idea for these yummy cupcakes on My 101 in 1001. She has a much better picture of them, but here are mine:

The basic recipe is to do the following:
  • Take a box of chocolate cake mix and follow the directions to prepare it and pre-heat the oven. Line a cupcake pan with liners. Twist several oreos apart and put one half in the bottom of each liner. Fill 3/4 of the way with cupcake batter and sprinkle with crushed oreos on top. Bake according to directions. Let cupcakes cool completely and ice with chocolate icing. Then cut oroes in half and put one half on the top of each cupcake.
Viola! Yummy cupcake goodness!

I actually only had one of these, because it's kind of chocolate overload for me. I knew that when I decided to bake them, but sometimes I bake things I don't like very much or at all just because I like to bake...and I know that I won't be tempted to eat every last one! I was telling this guy at work that and he thought I was crazy! Do any of you do that sometimes?

Anyway, these are good in moderation so try it out!

Sloppy Joes...

I have no clue why, but I'm always trying new recipes for Sloppy Joes. They're all good, but I keep wanting to see what else is out there. This recipe is adapted from a Tasty Kitchen recipe.

You need the following ingredients:
  • 2 lbs ground beef
  • 1 small onion chopped
  • 1 teaspoon celery seed
  • 10 oz. tomato sauce
  • 2 Tablespoons Worcestershire Sauce
  • 1 teaspoon ground mustard
  • 1/4 cups brown sugar
  • 1/4 cups ketchup
  • 1 teaspoon Mortons Natural Seasoning Salt
  • Salt and pepper to taste
Brown the meat and drain off the fat. Then add the onions and saute until softened. Add the remaining ingredients and cook over medium-low heat for 15-20 minutes; stirring frequently.

Serve on whole wheat hamburger buns with tater tots!

This should serve about 6-8 people. Sorry-no picture again this time. I keep forgetting! If only I had Ree Drummond's mad skills :)

Oh btw-did you hear that Ree's book she wrote is probably going to be made into a movie?!!? And that Reese Witherspoon might play Ree? This is exciting to me for several reasons:
  • Ree's from Oklahoma and so am I so for some reason I feel like I should be super excited
  • I LOVE her recipes and one day will make those famous cin. rolls!
  • I love the part of the book she has posted on her website
  • Romantic comedies are my favorite type of movie, so I really hope it gets made!

Max's birthday!

I'm horribly late posting this (his b-day is in early February), but I wanted you all to see the cute cake I got for Max's birthday! I had really wanted to get Max a cake for his 1st birthday, but I decided to save money instead and just got him a bunch of toys. This year I was determined to get him a cake because he's seriously one of the best little pups ever. :) Here's the cake I got him from this specialty dog bakery:

When I first got Max he seemed to have an allergy to peanut butter so I went with the carrot cake and cream cheese icing. I thought it looked yummy, but the inside was really hard! I'm not sure if it's supposed to be like that or not, but regardless I gave a piece to each one of the pups:

They definitely enjoyed the icing waaay more then the actual cake, but I didn't give them too much because I was worried they'd get sick. I had tons of leftovers even after taking it to my parents so their three dogs could have some. I don't think I'll get another one next year, but it was super fun to do it just this time!

this is not a low-fat recipe! BUT if you can look past that, this just might be one of the best things I've eaten in a long time...and the best part is-it's SUPER easy!

Rich Pasta for the Poor Kitchen: adapted from a recipe found on
  • 6 ounces package dry pasta (this is a little over a 1/4 of a regular 1lb box of pasta): I used shells and that really got all the sauce in all the little crevices
  • 1 stick of butter
  • 2 tablespoons minced garlic
  • salt
  • black pepper
  • parsley: I used dry flakes because that's what I had on hand and it worked fine
  • A generous amount of grated parm.
Bring a large pot of water to a boil-salt generously. Cook pasta until al dente. Drain. Heat a skillet over medium-low heat. Melt butter and garlic very slowly to avoid burning the garlic. Season with salt, black pepper, and parsley. Toss pasta into the skillet until well coated with butter. Increase heat to medium and cook until pasta is heated through and has absorbed some of the butter. Adjust seasoning with salt and pepper. Serve with as much parmesan cheese as you'd like!

As a side dish this would probably serve 3-4 people. I ate it as my main dish for dinner tonight and had a little bit left over for lunch tomorrow. Again, I know this is a pretty unhealthy dinner, but it's one of those things that you can probably make with what you have already in the kitchen-and it's yummy!

I caved...

and joined a gym close to my work. Well technically I just picked up the paperwork today, but I'll be turning it in and working out on Friday. All my plans to work out after work have FAILED miserably, so I'm just going to have to suck it up and work out on my lunch break. It'll be done and over with and I won't have to worry about fitting it in once I get home.
To make me feel better about giving up my lunch hour that is currently full of socializing and good food to instead get sweaty and hot, I went online and purchased a new pair of gym shorts and a cute dry fit shirt. They should be here in 4-6 days!
Oh btw, I bought the dress and shrug, so I'll let you know if looks good!

You know you live in Oklahoma when...

you are enjoying the thunderstorm and you suddenly realize it's March-you then start scanning the horizon for wall clouds and check the radio stations to see if anyone is talking about tornado watches or warnings...gotta love spring in Oklahoma!

You know you're a blogger when you looking for those wall clouds and think about blogging it :)

What do you think?

I'm going to a wedding at the end of April and I couldn't think of anything I already own that would be appropriate to wear. I'm hoping it will be nice Spring weather, so what do you think of the black shrug and dress below?

Do you think they are dressy enough for a wedding? Or too dressy for a spring wedding? I would love to wear strappy sandals but one of co-workers thought that might be too casual and said I should wear heels...what are your thoughts?

I've been having pain in the left side of my jaw off and on for the past two weeks. It became constant 4 or 5 days ago and would really bother me to bite down or open mouth very wide. I had a doctors appointment yesterday and it turns out I've irritated my tmj joint (I think that's what he said). He said that it could be caused by stress or grinding my teeth and hopefully we could take care of it and the joint would feel better.

He's prescribed a muscle relaxer and anti-inflammatory to take before bedtime each night. I took them last night for the first time and I am dragging today! That muscle relaxer is still kicking my butt and I just can't seem to stay awake. My doc warned me that might happen so he said I could cut them in half, which I most certaintly will do.

My question to you guys, though is this: Do any of you suffer from tmj or jaw pain? If so, what kinds of treatments have you used to feel better? I know several people that have had surgery, but that was for much more severe cases then what I have. I haven't noticed any difference today, but I'm guessing it just takes awhile to work...any thoughts?

It's sunny...

and 42 degrees today! Woohoo! That may sound cold still, but it's a nice break from all the freezing temps and grey days we've been having. I actually heart grey, rainy days but it's been so long since I've seen the sun! And I'm leaving work early to go to a doctor's appointment so I'm looking forward to getting out of the office for a bit.

I have lots of blog posts planned, if I can just get my butt in gear!
  • I need to update you guys on how my "adult" party went!
  • I've been doing some re-decorating (a new dining room table, chairs, couch, loveseat, and bed!)I've been cooking much more lately so I need to devote some posts to that
