Quick and easy dinner...

Hi Ladies! I'm so sorry that I haven't posted in awhile-I've missed all of you! I'm still about a week behind on reading all the blogs that I follow, but I'm slowly catching up. We're actually having an ice storm right now so I'm working from home tomorrow. I should be calling patients and pharmaceutical companies, but...I think I can read a few blogs in there somewhere. Ssshhhh-don't tell!

So I thought I'd post a really simple recipe since this blog is supposed to be about finding my inner domestic diva. That definitely includes cooking, even if it's easy cooking. Right? Right.

I'm sure most of you have made some variation of this dish in the past, but here's my take: I call it ziti, although I very rarely use ziti noodles so this time it will be called "spiral pasta casserole bake."

First, boil 1lb of dry pasta. Use whatever kind of noodles you want, but noodles that have more ridges are better because it catches more of the sauce when you're eating. I typically use penne, but I had spiral already at home so I went with that. Cook the noodles until they're about 3/4 of the way done, drain them and put them in a casserole dish. Tip: while they're boiling I try to get other chores done around the house like vacuum, load the dishwasher, etc.

Then take around 3/4 of a small tub of ricotta cheese and mix it in. My mom uses the whole tub when she makes this, but I prefer less because the whole thing will start to taste like ricotta.
Then add a whole jar of whatever type of sauce you'd like to use. I use Ragu traditional spaghetti sauce and it tastes yummy! Throw a couple of handfuls of shredded mozzarella on top.
Cover with aluminum foil and bake for 30 minutes at 350 degrees. While baking go comfort your puppy that is feeling traumatized from all the vacuuming...

After 30 minutes, take out and enjoy!

It's super easy and simple but it's great when you're busy and don't have alot of time to cook or if you have friends come by without much notice because I usually have most of the ingredients on hand. Toast some garlic bread and serve with a salad and you're set!

Oh my!

I am soooo behind on reading blogs!

Max got really sick Thursday night and spent all day Friday and then again all day Saturday at the vet getting fluids, so I've been taking care of him. I was really worried about him and ended up calling my mom Sunday morning crying because I wasn't sure if he would pull through whatever was wrong. He hadn't eaten in 3 days, he was refusing to drink, he was extremely lethargic, and TMI...but his bowel movements were basically just blood. The vet didn't know what was causing it or why it happened so quickly, but he had Max on a ton of meds. My parents came over Sunday afternoon and let me sleep for a little bit (I was up around the clock with him for 3 days trying to get him to eat or drink and making sure he got outside to throw up and go to the bathroom) and my dad finally got him to eat some of Maddy's food. We had tried everything but her food, so I'm glad my dad tried it. Once he started eating, he slowly started getting better and after getting more fluids Monday, he got the IV removed and is pretty much back to normal today! Woohoo! My 10 lb little boy lost a couple pounds, but I think he'll gain it back since he's eating pretty much regularly.

So now that everything has calmed down, I hope to catch up on all your blogs!

Wishful Wednesday!

It's time for another Wishful Wednesday! Today's topic is:

'I wish' .... I had the startup funds to build that company I have always dreamt about, and it would be _____! "An office supply store/dog bakery!"

I absolutely adore office supplies:

I just think it's so hard to find cute office supplies in one place. Sometimes you can find them at Target or little boutiques, but I would have everything from file folders with patterns, to fun pens, and binder clips, and staplers, and phones...I could go on and on! I also would offer classes targeted at twenty-somethings like what you need to know when buying a home, the best way to file all your important papers, how to make a budget, etc. I would have loved to be able to go to a cute, funky store with other girls my age and learn about that stuff (especially the whole home buying process cause it's stressful!)

So that stuff would be on one side of my store and on the other would be a dog bakery! I love places that make healthy treats for our pups, but they are so few and far between where I live. I want to get Max a birthday cake, but I only have one place to choose from so I'm stuck with their prices, recipes and designs...

I think this is such a cute set-up!

I totally get that these two themes don't typically go together, but I think it's a neat combo...lots of women my age love organizational stuff and they have puppies, so you could cross two errands off with one stop!

Catch Up...

I've been meaning to post a bunch of things, but just now uploaded the photos, so this will be sort of random...

Spool No. 72 Review...

Remember when I posted about this sweater I was lusting after? Well I ordered it and it got delivered on Friday! Kuddos to the UPS man that finally found my house!

I have to say that I am absolutely IN LOVE with this article of clothing. I wore it the entire weekend and while it's a wee bit too small, I'm still wearing it like there's no tomorrow. It fits fine, but it's a little tight across the girls, so I figure if I drop 5 or 10 pounds, it'll be a perfect fit!

So now that I know the quality of clothing is good, delivery is quick, and it's just my are a few more items I'm tempted to purchase:

I'm soooo exhausted!

Maddy is waking up at night to play and go to the bathroom so I haven't been getting any real consecutive sleep lately. I feel like I can barely keep my eyes open and I'm just counting down to the weekend when I can sneak in some naps. Until then I'm trying to do everything I can to get some energy. What do you guys do when you're dragging (eat certain things, exercise, drink coffee, etc)?

He loves her, he loves her not...

So far Max and Maddy seem to have a love/hate kind of relationship. I think Max loves playing with her, but he won't lay down by her or touch her bed or anything-it's kinda weird.

So I have a funny story for all of you...

When I first got little Maxwell I would take him to the dog park to play with the other little pups. At this point he wasn't lifting his leg to pee yet or marking anything so that was great. Well the big dogs at the dog park are separated from the little ones by a chain length fence. This HUGE dog came over to the fence so Max went to check him out. I'm keeping an eye on Max and see (and I swear this was all in slow motion) this HUGE dog lift it's leg and I yell "Nooooooooo....(still in slow motion) and watch as this brute pees all over my little puppy :( The owner of the huge dog didn't even apologize and I had to take home a pee soaked pup and give him a bath.

So I figure that was unfortunate, but we make another trip back to the dog park a couple of days later. My sweet little boy then proceeds to lift his leg and pee on every single dog at the park smaller then him and even managed to get a few people's feet. I was MORTIFIED! I've tried to take him back a few more times and he just pees on all the little dogs. So...we don't go there anymore. And it's weird because he'll only do it to dogs littler then him...

Anyway, so I bring Madelynne home and take her outside right after we get in the door so she can go to the bathroom. She's been in the car for almost 3 hours so I figure she probably needs to really go. Max goes out with us and goes pee and then comes over to her and...pees all over her! I couldn't believe it (although really, I should have expected it by now)! Poor Madelynne looked up at me all confused and I just stared in shock at Max. I mean really? really!?!?!?

The moral of this story is that I blame all of Max's bad behavior on that one HUGE dog that started out this whole sordid habit. Well that's not really a moral I guess, but you get the idea.

Happy New Year!

Happy New Year everyone! I can't believe it's officially 2010!

I love New Years Day-it like this fresh start and while I realize I could make a change on any day of the year, this particular one just motivates me. However, I'm way too guilty of making resolutions and not following through, so I won't be making any this year. Instead my goal is to accomplish as much of my 101 list as possible. There's tons of great stuff on there and I'm really excited to continue tackling every one of them :)
